Vegan & Gluten Free Cinnamon buns

Bun Ingredients:

  • 9 Deciliter oat  flour
  • 2 Deciliter  sugar
  • 2 Tablespoons of cardamom
  • 1/2 Teaspoon salt
  • 1/2 Teaspoon baking soda
  • 2 Teaspoons of vanilla sugar or 1 vanilla bean
  • 100 Grams of almond butter or firm coconut oil
  • 4 Deciliter oat milk (room temp) or any preferred plant based milk
  • 1 Teaspoon of yeast

Method:

  1. Pre heat your oven to 225 degrees celcius 
  2. Mix all the dry ingredients in a medium bowl
  3. Add the yeast in the room temperature oat milk
  4. Gradually add inn the milk and yeast in the bowl with the dry ingredients and stir it until the dough will let go of the bowl
  5. let the dough rest with a kitchen towel on top in a warmer place in the kitchen for about 40-45 minutes until the dough is raised
  6. When the dough is ready you take it out of the bowl and roll it out with a rolling pin until it is square
  7. Add some almond butter, sugar and cinnamon on the square dough and start on one side and then you roll it up to the other side
  8. then you cut it in smaller pieces and lay them on a pan with baking paper
  9. Put them in the oven for about 10-12 minutes, keep an eye on them for the last two minutes
